Soft Snickerdoodles

These snickerdoodles are perfect for all occasions.They have the perfect texture and they still taste delicious.Enjoy!

Ingredients:


  • 1 cup butter
  • 1 1/2 cups sugar
  • 2 large eggs
  • 2 3/4 cups flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons sugar
  • 3 teaspoons cinnamon

  • Directions:

    1.Preheat oven to 350°F.

    2.Mix butter, 1 1/2 cups sugar and eggs thoroughly in a large bowl.

    3.Combine flour, cream of tartar, baking soda and salt in a separate bowl.

    4.Blend dry ingredients into butter mixture.

    5.Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.

    6.Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.

    7.Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.

    8.Coat by gently rolling balls of dough in the sugar mixture.

    9.Place on chilled ungreased cookie sheet, and bake 10 minutes.

    10.Remove from pan immediately.

    Mango Ice Cream

          When we got a new ice cream machine I was eager to test out several recipes. I have made classic vanilla, cookies and cream, maple walnut, and the most delicious of all, mango!This recipe took a few tries to master and the measurements may vary depending on the size of you ice cream maker, so i made them very basic.this recipe is so easy you can make it in just minutes.I hope you try it.

    Ingredients:
    •  Equal parts sweetened mango pulp, milk and heavy cream.( i use 1 1/2 of each, but i usually add 2 cups of mango pulp for extra mango flavor)
    • sugar(the amount of sugar depends on the sweetness of your mango pulp and the amount of sugar you like,just taste and keep adding)
    Directions:
    1. Mix all ingredients with a whisk in a large bowl.Churn using the ice cream makers instructions.

    Classic Chicken Pot Pie

            This is a really simple chicken pot pie recipe that I was very excited to try. I found some ready-made pie crust, but if you want you can make your own savory pie crust to coat the top and bottom of a glass pie plate.This is a very classic American chicken casserole-type dish that is easy and quick to make.And if you want you can really substitute anything for the chicken like shrimp or some more veggies.I am also providing step-by-step pictures so you know what it is supposed to look like.I hope you enjoy.

    Ingredients
    Crust:
    1box refrigerated pie crusts, softened as directed on box(enough for a two crust pie, each crust 9 inches)

    Filling
    1/3 cup butter or margarine
    1/3 cup chopped onion
    1/3 cup all-purpose flour
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1 3/4 cups  chicken broth
    1/2 cup milk
    2 1/2 cups cubed cooked chicken or turkey
    2 cups  frozen mixed vegetables, thawed
    Directions
    1 Heat oven to 425°F. Make pie crusts as directed on box for two-crust pie using 9-inch glass pie pan.
    2 In 2-quart saucepan, melt butter over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.

    3 Stir in chicken and mixed vegetables. Remove from heat. Spoon chicken mixture into crust-lined pan. Top with second crust; seal edge and flute. Cut slits in several places in top crust.
    4 Bake 30 to 40 minutes or until crust is golden brown. During last 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Let stand 5 minutes before serving

    Jingle Bells

        It was Christmas eve and we had friends over for a Christmas gift exchange.Everybody was really excited to see what kind of presents they would get.I got two cookbooks called cooking with kids and hello cupcake.Finally we went to sleep after an exciting night of opening presents.The next day after eating lunch I finally got to make peanut butter blossoms with a friend of mine named Rhagav.

    Peanut Butter Blossoms

                                         

    Ingredients

    • 48 HERSHEY'S KISSES Brand Milk Chocolates
    • 1/2 cup shortening
    • 3/4 cup  Creamy Peanut Butter
    • 1/3 cup granulated sugar
    • 1/3 cup packed light brown sugar
    • 1 egg
    • 2 tablespoons milk
    • 1 teaspoon vanilla extract
    • 1-1/2 cups all-purpose flour
    • 1 teaspoon baking soda                                                                                                                                                                     
    • 1/2 teaspoon salt
    • Granulated sugar

    Directions                                                           

    1.  Heat oven to 375°F. Remove wrappers from chocolates.
    2.  Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
    3.  Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
    4.  Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely. About 4 dozen cookies.

    A great birthday present

    On my 11th birthday we didn't have cake, we made peanut butter pie.It was a great birthday present.



    Peanut butter pie:

    Ingredients

    Hot Fudge Sauce:

    • 1/3 cup heavy cream
    • 1/4 cup light brown sugar
    • 1/4 cup light corn syrup
    • 2 tablespoons unsweetened cocoa powder
    • 1/8 teaspoon table salt
    • 2 teaspoons vanilla extract
    • 4 ounces semisweet chocolate, finely chopped

    Peanut Butter Pie:

    • 8 ounces cream cheese, at room temperature
    • 3/4 cup confectioners' sugar, plus 2 tablespoons, divided
    • 3/4 cup creamy peanut butter, at room temperature
    • 1 cup heavy whipping cream, plus whipped cream, for garnish, optional
    • 1 teaspoon vanilla extract
    • 2 ounces shaved milk chocolate
    • Chopped peanuts, optional

    Directions

    1 (9-inch) baked chocolate cookie pie crust

    Sauce: Add the cream, brown sugar, corn syrup, cocoa powder, salt, and vanilla extract to a heavy-bottomed saucepan over medium heat. Reduce the heat to a simmer and add the chopped chocolate. Stir continuously until the chocolate is melted and the sauce has thickened, roughly 3 to 4 minutes. Let the sauce cool for 10 minutes before serving.

    Pie: In a large bowl combine the cream cheese, 3/4 cups confectioners' sugar and the peanut butter until the mixture is light and fluffy, about 3 minutes.

    In a separate bowl, whip the heavy cream until thick and light. Add the remaining 2 tablespoons confectioners' sugar and vanilla extract. Continue to whip until stiff peaks form.

    Carefully fold the whipped cream into the peanut butter mixture. Pour the batter into the pie shell, sprinkle with the shaved milk chocolate and freeze for 4 hours.

    If desired, serve with the hot fudge sauce, whipped cream, and chopped peanuts

    Chocolate chip pancakes

    This recipe is great for breakfast or lunch or dinner(that's how great this recipe is.)

     Chocolate Chip Pancakes

    1 cup flour
    pinch of salt
    2 tbs sugar
    2 tbs baking powder
    1 cup milk
    1 egg
    2 tbs veg. oil
    chocolate chips



    In a medium sized bowl mix the dry ingredients( including sugar and salt ) together.In another bowl mix together wet ingredients,then add the wet ingredients into the dry ingredients and stir until batter is smooth.
    Heat a lightly greased pan on medium heat.Pour 1/4 cup batter onto the pan.While the first side is cooking add as many chocolate chips as you want t o the uncoooked,battery side.Once golden brown flip the pancake.Both sides should be golden brown once finished.Makes 4 servings.

    On a snowy day...

    A few weeks ago in Seattle it was heavily snowing.The roads were completely covered with snow and it was nearly impossible to get around.There are two positive things that came out of this.1.No school!!!!!2.Hours of fun in the snow.As me and my best friend were sledding down hills(not really,we were sledding in my tiny back yard.)after a while we felt like having a nice warm cup of hot cocoa,so I decided to make some.

    Recipe for hot cocoa 

    1/2 cup sugar
    1/4 cup cocoa powder
    1/3 cup water
    4   cups milk
    3/4 tsp vanilla
    mini marshmallows or whipped cream(optional)

    Stir together sugar, cocoa and salt in a medium saucepan,stir in water.Cook over medium heat,stirring constantly,until mixture comes to a boil.Boil for two minutes stirring constantly.Add milk,heat to serving temperature,stirring constantly,do not boil.

    Remove from heat,add vanilla.Serve with marshmallows or whipped cream if desired.
    Makes 5 servings
